Tahdig 101: Persian Crispy Rice, Explained

If there's one dish that starts friendly arguments at every Persian table, it's tahdig - the crispy golden rice crust from the bottom of the pot.

What it is

Tahdig (literally bottom of the pot) is the layer of rice - or bread, or potato - that crisps against the pot during cooking. Golden, crunchy, buttery. Persians consider it the best part, and families have been known to negotiate over pieces.

The technique

Parboiled basmati, a generous slick of oil or butter, saffron bloomed in hot water, then low heat and patience. The flip - turning the whole pot onto a platter in one motion - is pure theatre. When it works, the table goes quiet. Then everyone reaches at once.

Variations

Classic rice tahdig, potato tahdig (sliced potatoes), bread tahdig (lavash) - each with loyal fans. Our Imperial Menu features tahdig as it should be: crispy, saffron-golden, gone in minutes.
