Saffron costs $3,000-$5,000 per kilogram - more than gold per gram. Here's why, and why Persian cuisine treats it like no other.
Why so expensive
Each crocus flower gives three tiny stigmas, hand-picked at dawn. It takes ~150,000 flowers for one kilogram. Iran produces 90% of the world's saffron - the best comes from Khorasan.
Real vs fake
Real saffron: deep red threads, honey-like aroma, turns water golden slowly. Fake: dyed corn silk or safflower - colours water instantly red and tastes like nothing. If it's cheap, it's not saffron.
How Persians use it
Not as a garnish - as a foundation. Ground with sugar, bloomed in hot water, folded into rice (tahdig!), chicken marinades, desserts, even ice cream (bastani). No cuisine on earth uses saffron the way Persian cooking does - it's in our DNA.
